Quick Spicy Beans Tagine With Baked Eggs Recipe

1 Onion chopped
1 Clove Garlic, chopped
1 canned fresh chopped tomatoes
Handful Fresh Cilantro
1 tsp. fresh tomato puree
100g Dark Red Kidney Beans
100g White Navy Beans
1/2 Yellow Bell Pepper
100g Lobia or Black Eyed Peas
1 tsp Sweet Spanish Paprika
1 tsp Guinea spice (red hot chili pepper)
1 tsp Ground Black Peppercorns
1 tsp Ground Cumin
1/2 tsp Crushed Red Pepper
4 Organic Eggs
1/2 tsp Sea Salt or Regular Salt
1. Before starting cooking you need to Preheat your oven to 200 degrees Celsius

2. Take a deep casserole dish, drop vegetable oil and place it into the oven until the oil heats up for 2-3 minutes.

3. Remove the pot carefully from the oven, once it has heated up and add chopped onion and garlic. Mix them to coat the oil place back into oven and wait until the onion looks brown.

4. Then add diced tomatoes and chopped tomatoes and puree as well. Add Yellow Bell Pepper, three types of beans (rinse them well in water before), Sweet Spanish Paprika, Guinea spice, Ground Black Peppercorns, Ground Cumin, Crushed Red Pepper, Sea Salt or Regular Salt to taste.

5. Remove the lid from casserole mixed everything together well and place back in the oven for five minutes.

6. When mixture has turned thick, Put the lid on it and cook in the oven for 20 minutes.

7. After 20 minutes, make small indents into the mixture, using the back of the spoon and crack eggs into the four indents you make through spoon. Put the lid back on the casserole and steam cook 4 minute while eggs do not turn into a perfect runny consistency.

8. Remove the casserole from the oven and wait for 3-4 minutes.

9. Garnish it with chopped Cilantro

10. Serve hot with fresh grilled bread, or Bread slices
