*******Ingredients for GHEVAR*******

Serves 4 to 5

3 cups - flour
1 kg - Ghee (for deep frying)
4 cups - water
1/2 cup - Milk
1/4 tsp - food color (yellow)

*****For Syrup*****

1.5 cups - Sugar
1 cup - water
A pinch of saffron
1/2 cup ghee (solidified)

******For Garnishing/Toppings *****

1 tbsp - chopped Almonds and Pistachios
1 tsp  - Cardamom Powder
1/2 tsp Safforon rubbed in 1 tbsp - Milk
*****Prepare Syrup*****

- Heat sugar syrup of 1 thread consistency.
- Take solidified ghee in a bowl and churn it till it turns white.
- Add milk, flour and 1 cup water and Mix it to make smooth batter.
- Dissolve color in some water as required and add to the batter. Batter should be fairly thin (it should run off easily when poured from spoon).
- Take an aluminium or steel cylindrical container (do not use lid). Fill half with ghee and heat till when ghee is smoky hot. Pour in center of ghee, slowly in one continuous thread like stream.
- Lower down the heat and leave it till settles and looks brown it and loose Ghevar with an iron skewer inserted in hole.
- Lift carefully, at a slant, and use a wire mesh to drain GHEVAR
- Dip Ghevar in sugar syrup, and remove, keep aside to drain excess syrup.
- Garnish it with dry-fruits and cardamom powder. You can also use Rabari/Malai to garnish and for better taste.
