Egg Fried Rice
1-1/2 cups uncooked instant rice
1 tablespoon sesame oil
soy sauce to taste
2 eggs, beaten
1 teaspoon finely chopped fresh ginger root
1/4 cup finely chopped green onions
1 Bring water to a boil in a medium saucepan. Stir in rice and cover. Remove from heat and let stand 5 minutes. Fluff with a fork and drain any excess water.
Heat oil in a large skillet over medium heat. Stir in rice and soy sauce heat briefly then transfer rice to a bowl.
Scramble the eggs in the same skillet, then stir in rice. Stir in ginger and green onions heat through and serve.
